Banana Chocolate Chips muffins

A while back, I promised you some healthy snack recipes. And well, life happened! My parents and my son were visiting for the holidays, then we went to Thailand, all that kept me busy. But, most importantly almost all the recipes I tried weren’t so great. Of course, you can always go old fashion and slice an apple or grab a handful of nuts, but I was looking for something more appealing and delicious.
I am not too sure what went wrong with the bars and muffins I tried to bake, maybe having only healthy ingredients can’t make for a good treat, maybe I’m a poor baker. Anyhow, this healthy banana and chocolate chips muffins recipe passed the test and turned out yummy.  Say Hi to my new breakfast.

The Recipe:

 1 cup Mashed Bananas ( Ripe) - about 3 medium size bananas
 ¼ cup Wild Honey
 ¼ cup Coconut Oil
 ½ cup Greek Yogurt or Curd
 1 Egg
 ½ tsp Sea Salt
 ½ cup Dark Chocolate Chipes
 1 tsp Vanilla Extract (Optionnal)
 1 tsp Baking Soda

Preheat oven to 165 degrees Celsus and grease muffin tin with coconut oil.

In a medium mixing bowl, mash the bananas using a fork or potato masher. Add the egg, wild honey, and vanilla and stir to combine. Set aside.

In a separate mixing bowl, combine the flour, baking soda, and sea salt. Mix well.

Add the dry ingredients to the wet ingredients and stir to combine. Add the Greek Yogurt and stir well.

Fold in the Dark Chocolate Chips

Pour the mix into the prepared muffin pan, approximately 2/3 of the way full.

Bake for 25-30 minutes, or until a toothpick inserted comes out clean and tops are golden brown.
Because we use Honey instead of sugar, we can't bake these goodies at 180 degrees, or the muffin would look very brown on the outside a while being uncooked on the inside.
