Banana Pancake

So I went to the gym this morning... and because every effort deserves a reward, I made some banana pancakes with coconut whipped cream and strawberries. Banana pancake is a healthy version of the normal pancake and they are also a lot easier to make. Today, I topped them with coconut whipped cream and strawberries, but you can serve with pretty much everything: Honey, lemon, and sugar, Nutella, jam...

For the Pancakes
 2 qts Banana - Medium size - ripped
 2 qts Eggs - Large
 1 dash Vanilla Extract
 1 pinch Baking Powder
For the Topping
 20 ml Coconut cream
 125 g Strawberry

Pancake

1. In a bowl, mash the banana with a fork until it becomes a thick purée. Stir in the eggs, baking powder and vanilla extract.

2. Heat a non-stick pan over medium heat and brush with oil. Do not use Coconut oil as the oil will burn and produce load of smoke. Spoon two small pancake in the pan, cook 1.5/2 minutes on each side. Repeat the process until the batter is finish.

Topping

1. Start beating the coconut cream at low speed until it becomes foamy, then beat harder to get a more consistent whipped cream. Tip: Place the coconut cream can in the fridge overnight - it's the only way to make it whipped.

2. Slice the strawberries

Place the pancake in a plate, top it with whipped cream, layer one more pancake and top with whipped cream and strawberries.
Et voila, you have a healthy breakfast or a snack for late night craving.
